I read the warnings of other commenters to use cupcake liners, foolishly ignored them, and regretted it. Will frost it tomorrow with a butter cream icing and serve it for my daughters 40th birthday. I have made this amazing cake many times, but I am just noticing that the cake calls for unsweetened cocoa, and frosting just cocoa powder. It will not taste like vinegar at all. In a medium mixing bowl, blend EGGS and SUGAR on low speed until well-combined. High elevation baking typically needs a bit more flour or less leavening, I think. It took about 40 minutes for the toothpick tester to be clean. It wasnt pronounced enough to make a difference to how the glaze settled, though. I measure and weight my ingredients for accuracy and have no problems with my oven temperature. One day Ill try it as written with no eggs! You can make it without it, its just less glossy. Even my husband, who is usually underwhelmed by baked goods, sent me a text message the next day telling me how much he loved it. I tried it in a bundt pan, and it was nice but was a small ring. My mom has been making it my whole life always iced with butter frosting. What that is about, I do not know because I did spray the parchment with cooking spray. 4 oz chocolate chips After reading many of the comments from people who tried this cake, I made it today (with my kids) for my sons 5th birthday.
